A cellar that keeps its own hours.

Nordvane began as a conversation between a Jalisco maestro and a stone room in the north. The agave still grows above Atotonilco el Alto, where the nights are cold enough to slow the plant and sweeten it.

Nothing about the house is rushed. Ovens stay banked. Fermentation stays open to the highland air. The casks that need longer are simply left alone. What leaves the estate is the spirit we would pour for ourselves.

Five slow gestures.

01

Harvest

Jimadores take only piñas that have turned heavy and sweet.

02

Roast

Stone ovens, low heat, and the patience to wait for caramel rather than char.

03

Ferment

Open wooden vats and the wild yeast that already lives on the estate.

04

Distill

Twice through small copper. The heads and tails are cut by taste.

05

Rest

Darkness, oak when it is wanted, and time enough to finish the sentence.

The tasting room is open by appointment.

Fridays are reserved for a seated tasting of the three expressions. Ask for the house, and come ready to drink slowly.
